A fatty fish with a full flavour
Although the name suggests otherwise, Black cod (Sablefish) is not a member of the cod family but belongs to the scorpaeniformes and flathead species.
Black Cod is characterised by its delicate flavour and high fat content. This fish contains more Omega 3 than tuna and salmon. Its flaky, buttery texture and pearl-white colour make this an extremely popular product.
The fish is processed into fillets or portions in accordance with the “Headed and Gutted” specification. In other words, the head and guts are removed.
